Ep. 605 Monty Waldin interviews Helena Variara from Colombaia Winery More about Colombaia: Colombaia has 4 hectares of vineyards, exposed to the southwest, with a house and cellar. The soil is clay/calcar full of fossils shells. Dante and Helena work the vineyard like it were a big garden, the biodynamic method allowed them to work in active perception, following the rhythms of nature, helping vines reach the mineral elements found in the soil. Activities in the cellar respect the mantra "least amount of intervention as possible". Fermentation is spontaneous, using natural grape yeast. The process is slow and careful, keeping the vital cycles of fermentation, without clarifying, filtering or stabilizing.
